A healthy winter soup recipe made with soaked lentils and fresh vegetables, a hearty broth to shudder away the winter chills. Enjoy!

Serves: 2-3 people
½ cup winter soup mix( pearl barley, lentils, green split peas, whole green lentils, red kidney beans)
1 small capsicum (red, orange or yellow)
1 small ripe tomato chopped into 4 pieces
1 bunch bok choy
1 medium size raw beet root, peeled and chopped into medium cubes
1 small onion
1 carrot, peeled
1 small potato
1 small egg plant
1 clove garlic (optional)
Spinach leaves
Cooking Instructions:
Soak ½ cup of winter soup mix in water for 6-8 hours.
Drain and place in 2 cups of fresh water.
Boil for 10 minutes and simmer for 35 minutes or until tender. Add salt and pepper according to your taste.
Note: cooking times may vary due to natural variation and seasonality.
While the winter soup mix is cooking, start chopping the vegetables into medium cubes. Boil 3 cups of water in a pot, add potato, carrot and beet root and let it boil for 7-10 minutes or until it is partially cooked. Add the remaining vegetables (except spinach and bok choy) and let it boil for another 5 minutes. Now add spinach and bok choy, simmer it for 5 minutes. You can vary the soup by adding different vegetables like peas, cauliflower, sweet potato as per your choice.
Now, transfer a small portion of the cooked soup mix into a bowl and add the boiled vegetable and stock. Add some salt and pepper according to your taste. If you wish, you can also add boiled pasta/ noodles.
Your winter special soup is now ready to serve!
